In our experience, the best thing to do is first to select an area in the country that you want to go to. Only then should you go on to one of the zimmer sites (we like zimmer.co.il also), see pictures, see what each one has to offer, make phone calls to all those that sound good, compare services, prices, and availability.
Some pointers and advice - book early!! Take into account that the three weeks of "Bein HaZmanim" i.e., from after 9th of Av till 1st of Elul are packed,it's peak season, and prices will be higher. We ahve always gone up north before the three weeks, and it's much more pleasurable! Better prices, less crowded, etc! Enjoy!
